1 pound bacon (1/4 lb.)
4 yellow onions, finely chopped (1)
1/2 cup minced garlic (3-4)
1 gallon ketchup (4 cups)
2 cups Worcestershire sauce (1/2 c)
2 cups red wine vinegar (1/2 c)
1/2 cup prepared mustard (1/8 c)
1/2 cup molasses (1/8 c)
1/4 cup Tabasco sauce (1/2 T)
2 T cumin (2 tsp)
1 T liquid smoke (1 tsp)
Cut bacon into 1 inch pieces and fry, in large stock pot, until crispy. Add onion and garlic and saute until tender. Add all the remaining ingredients, except pork. Simmer for 30 minutes. May be made up to one week ahead and stored covered in refrigerator.
